Oat pita (or oak-cakes) with greens and hummus made by @aprilbura. Here's how to whip up the 400-calorie version. Ingredients 1/2 cup oats 1/3 cup water... pinch of salt 1/2 Tbsp ground flaxseeds 1 tsp olive oil 2 oz. hummus 1/2 cup greens 2 sun-dried tomatoes (chopped) Directions 1. Add oats, water, salt and flax seeds to a mixer and blend on high. 2. Heat oil in a pan on medium heat. Add a tablespoon of the oats mixture and fry for around 2 minutes per side. Repeat until no mixture left. 3. Top oats pitas with greens, hummus and sun-dried tomato.

8fit's Comfort Bowl recipe is perfect as we transition from winter to spring. It's packed with vitamin-C making it great for any of you suffering from a change-of-season cold. For the 500-calorie version... Ingredients:... 2 carrots 2 tsp olive oil 3.5 Tbsp rice (dry) 1/2 cup water 1/4 cup lentils 3/4 cup chopped broccoli 1/4 red cabbage (small) 1 lime, juiced 1/4 tsp salt 1/4 tsp chili flakes (or less!) 1 Tbsp sesame seeds Directions 1. Preheat oven to 400 F (200 C). 2. Wash the carrot and cut into bite-sized cubes. Put onto a baking sheet layered with baking paper and drizzle with half of the olive oil. Bake in the oven for about 30 minutes. Meanwhile, continue with the next steps. 3. In a saucepan add the rice and water. Bring to a boil, reduce to simmer and cook covered for 20 minutes. Add lentils and cook for about 25 minutes more. 4. Meanwhile, wash the broccoli thoroughly, pick and remove leaves and cut the broccoli crowns into small pieces. 5. About five minutes before the rice and lentils have cooked (add a little more liquid if they are too dry), add the broccoli. 6. While the rice and lentils are still cooking, prepare the cabbage Wash it and shred it. Toss with squeezed lime juice, the rest of the olive oil, some salt and chili. Toss to combine in a bowl. 7. Spoon the cooked rice and lentils with the steamed veggies to the bowl. Sprinkle sesame seeds and seasonings on top and enjoy.
